How it is made

Quantities are for 4 people. The steps are in the order you do them.

  1. peel the potatoes and grate them into a sieve set over a bowl
  2. leave them to rest for about a quarter of an hour, so that the liquid drips into the bowl
  3. pour away the liquid and put the potatoes back in the bowl, on top of the starch that has settled on the bottom
  4. add the eggs, the salt and the flour, or the rolled oats
  5. add the grated onion and the chopped parsley or leek, and mix well
  6. in the hot oil fry small fritters, until they are crisp and golden
  7. drain them on kitchen paper
  8. serve them with fresh apple sauce or with sugar beet syrup; they also go well with smoked salmon or with wild mushrooms
