How it is made

Quantities are for 4 people. The steps are in the order you do them.

  1. dice the cheddar
  2. put the slices of bread in four ovenproof dishes, one each
  3. in a saucepan melt the cheddar without adding any fat, stirring all the time: at first it goes stringy, and that is normal
  4. when it coats the spoon, pour in the beer and stir until everything is blended
  5. add the mustard
  6. pour the cheese over the slices of bread
  7. put in the oven at 200 degrees for about ten minutes, until well browned
  8. serve at once, with a salad or with chips
