Pa amb Tomàquet
toasted bread rubbed with ripe tomato, garlic, oil and salt: the simplest and most Catalan thing you can eat

How it is made
Quantities are for 2 people. The steps are in the order you do them.
- cut the bread into slices a centimetre and a half thick and toast them in the oven at 180 degrees for 3 or 4 minutes, or on the grill, until crisp outside and still soft inside
- cut the garlic clove in half and rub it over the toasted surface: this step is optional, but it gives the bread its background note
- halve the tomatoes without peeling them and press them into the bread with a circular motion, spreading pulp and juice until the whole slice is red
- pour over a thread of extra virgin olive oil and a pinch of sea salt
- serve at once, while the bread is crisp and the tomato fresh: eat it on its own or with jamón serrano, cheese, anchovies in oil, or alongside grilled meat
